This looks very pretty, edible, and delicious. Its tiny, 1 maybe 2 bites, but it’s probably intended as a single course of 20+ at a really expensive place where the presentation and craft is a major part of the experience.
That restaurant where they smear your food all over the table is stupid. This is an example of the very best version of food as theater.

Some people need to educate themselves on what is stupid and what is art. The precision and time it takes to do this, would drive a normal person insane. This person on the other hand is a true artist and I bet the flavors are incredibly delicious!

I’ve always assumed these are mostly to showcase the creator’s technical skills and creativity rather than be practical stuff they try to serve to someone. If I saw this in a restaurant I might think it was stupid, but if it’s just something this person makes for themselves because they can, I don’t really see an issue.
